The blue sky and surrounding sunset soak in through the glass windows of the restaurant, adding as an accent to the yellow seating pillows and crisp white walls. The light colored brick facade and the colorful blown-glass vases hanging from the ceiling really add to the southwestern feel.
The restaurant surroundings are reflected in the bold Baja flavors that Cabo presents to diners. With more than 130 authentic Mexican dishes to choose from and a great atmosphere, why would you want to eat Mexican cuisine any where else? Start with one of their delicious appetizers. Their tableside made guacamole is fabulous, fresh with two ripe avocados, roma tomatoes, green Serrano chilies, sweet red onions, cilantro, and freshly squeezed lime served with warm tortilla chips. The cholula chicken wings, lettuce wrap tacos, and chili con queso are also great starters. For their entrees, Cabo serves all of your Mexican favorites, as well as house specialties. They have everything from tacos to enchiladas to fajitas. They have numerous stuffed burritos and chimichangas, as well, stuffed with all of your favorite fillings and even some more unusual items. Try their Seafood Chimichanga, stuffed with orange roughy, shrimp, and mahi-mahi, for something a little different. Their house specialties are great options, as well. They have pollo racheros, a carne asada platter, and a baja pollo rostizado (slow roasted chicken marinated with cilantro, garlic, tequila, and lime juice). Most of the dishes are served with Mexican rice and your choice of refried or black beans.
