Circo is an excellent spot to enjoy the Bellagio fountains. Glass walls surround the dining room offer some of the best views of the show in the entire hotel. Circo is a Tuscan-style restaurant with a circus theme. This is a no kid's restaurant though; Circo is a romantic and elegant upscale restaurant that offers some of the best Italian flavors on the Las Vegas Strip. The décor is a deep blue background with rick red and yellow tones lining the ceilings and draperies. Long flowing curtains create an intimate (and not to mention sound absorbing) vibe that is perfect for anything from a first date to a 50th anniversary. Romance is in the air. However, this restaurant is romantic and playful at the same time with yellow table cloths that surprise your senses almost as much as the food will.
Start with a selection of wine hand picked by head sommelier William Moss, who is often in-house to help you choose from one of over 900 different bottles shipped into the Bellagio from all over the world. Appetizers are divided into hot and cold selections. Cold favorites include the oysters, caviar, and seafood platters. Hot appetizers include buffalo mozzarella, sliced rare ahi tuna, or rabbit loin stuffed with sausage. When dining at Circo, try the Tuscan soup. It’s made with 30 different types of vegetables and it’s rich and delicious. Circo is famous for their pizzas some include ingredients such as smoked salmon, or lobster and shrimp. Try the penne pasta in brandy sauce with prawns and you will not be disappointed. Another favorite at Circo is the lamb, which is braised in a bath of Cianti or the duck filled tortellini sautéed in butter. For dessert, taste the Bombolini, a doughnut stuffed with cream sauce. They are delicious. You may also want to request a seat near the window. The view of the Bellagio fountains paired with an excellent bottle of wine will win over almost any date.
