Located at the Monte Carlo, Diablo’s Cantina is a collaboration between the resort and Light Group, one of Las Vegas’ most successful nightlife organizations best known for the Bellagio’s Bank nightclub. It was a partnership made in heaven, as it resulted in a hot and spicy Mexican restaurant with an equally hot nighttime lounge. Mixing rustic glazed tile and whimsical Mexican adornments with plasma TVs and lovely senorita servers, Diablo’s Cantina is a fun place to fill your stomach in a non-stop party atmosphere.
Alongside tantalizing libations, Diablo’s Cantina offers a mesh of American classics and South-of-the-Border delicacies. Starters like Empanadas and Diablo’s Box of Angry Calamari are served to perfection with tasty dipping sauces, while entrees like the Steak Burrito and Diablo’s Signature Three Layer Club Quesadilla will leave diners delightfully stuffed. Four different kinds of nachos (chicken, Cuban pork, spiced skirt steak, and four cheese) are available for snacking while you down the signature margaritas and tequilas, as well as an array of salads, sandwiches, tacos, and desserts.
Though it’s a tasty place for lunch or dinner, Diablo’s Cantina is particularly suited for an evening out. The hot and spicy food is paired with a walk-up frozen/specialty bar on the first floor. The second floor features a stage for live acts and DJ, as well as an airy center bar. Over 32 different varieties of tequila are available to accompany the generous portions, as well as a tequila sampler. Guests also enjoy open-air dining on the first floor, and outdoor patio dining is available on the second – a very positive feature considering all the alcohol that’s available at Diablo’s.
