Chef Charlie Trotter from Chicago will be one of the fresh new names on the list of celebrity chef’s at the Venetian’s new Palazzo resort which just opened in January. The famous Charlie Trotter’s in Chicago was named as the 30th best restaurant in the world soon after it opened in 1987. Trotter has also hosted a cooking series titled The Kitchen Sessions with Charlie Trotter, which appears on PBS. He also appeared in the hit film My Best Friends Wedding, making a cameo appearance as an angry chef. He later opened Trotter’s To Go, a chain of small deli-style restaurants also located throughout Chicago. Trotter studied at the California Culinary Academy and has been perfecting his craft ever since. He has also opened a restaurant in Las Cabos, Mexico. C is primarily a seafood restaurant designed mostly for American tourists who often travel through the popular vacation destination. The flagship location in Chicago is a five star and five diamond award winner, Charlie Trotter’s newest venture will be in the new Palazzo Hotel and Casino, adjacent to its sister property The Venetian. This will be the first time one of Trotters restaurant will have powerful side-by-side competition. The restaurant will be located right next to Vegas giants like Wolfgang Puck and Mario Batali, who have already made a name for themselves in sin city. Wolfgang Puck has almost a dozen restaurants spliced throughout the town and this will be Mario Batali’s second eatery at a Venetian resort. Charlie Trotter’s newest spot, appropriately named, Restaurant Charlie will be a mostly seafood restaurant. However, Trotter will stay true to his success and continue using fresh organic ingredients, which will change seasonally. Although Trotter is new to the Venetian, he had a quick run in Vegas a few years ago with his restaurant Charlie Trotter’s which was open in the MGM Grand for a period of time until the were unwilling to meet the demands of the hotel and therefore closed shop. Trotter had great success with his short-lived restaurant and there are great expectations leading up to the opening of his newest one. The competition here will be fierce, however; with neighbors like Emeril Lagasse. There will also be a sports bar in the Palazzo owned by rapper Jay-Z. The Palazzo has invested their trust in Charlie Trotter and it will be one of their most expensive and highly advertised restaurants inside the hotel. Trotter is also planning to open two more restaurants worldwide. Restaurant Charlie is set to open sometime in February.
